Heath, Edith M. 1911 Excelsior Diary. Jefferson County, NY, 1911-1912. A glimpse into the day-to-day farm life of a woman prior to World War I. Edith Heath and her husband Fred, lived on a farm near Adams Center - Watertown, NY. They led a simple life of growing vegetables and raising livestock. Every day Edith enters the weather conditions and what she accomplished. Some of the entries include planting and sowing, plowing, husking, butchering pigs, selling off hens, ironing, sewing, baking, cleaning, canning and pickling. The telephone is coming into use, and there is a "telephone meeting" at the Center in February. At the end of the diary, Edith uses the pages designed for financial records for a list of local births, marriages, and deaths. Pristine condition.
